Ingredients

Scale
  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 cup chopped kale
  • 1 cup diced sweet potatoes
  • 1/2 cup cranberries
  • 1/4 cup walnuts
  • 2 tablespoons olive oil
  • 1 teaspoon cinnamon
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Rinse quinoa under cold water.
  3. In a pot, combine quinoa and vegetable broth. Bring to a boil, then simmer for 15 minutes.
  4. While quinoa cooks, toss sweet potatoes with olive oil, cinnamon, salt, and pepper. Spread on a baking sheet.
  5. Roast sweet potatoes for 25 minutes until tender.
  6. In a large bowl, combine cooked quinoa, roasted sweet potatoes, kale, cranberries, and walnuts.
  7. Toss gently and serve warm.

  • Adjust seasoning to your taste.
  • Substitute other nuts if desired.
