Ingredients

  • 2 tablespoons salt
  • 1 tablespoon black pepper
  • 1 orange, quartered
  • 1 onion, quartered
  • 2 sprigs fresh thyme
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Remove the giblets from the duck and pat it dry with paper towels.
  3. Season the duck inside and out with salt and pepper.
  4. Stuff the cavity with orange, onion, and thyme.
  5. Rub the skin with olive oil.
  6. Place the duck on a rack in a roasting pan.
  7. Roast for 1.5 to 2 hours, until the skin is crispy and the internal temperature reaches 165°F (74°C).
  8. Let it rest for 15 minutes before carving.
