Ingredients

- 1 whole duck (4–5 lbs)
- 2 tablespoons salt
- 1 tablespoon black pepper
- 1 orange, quartered
- 1 onion, quartered
- 2 sprigs fresh thyme
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- Remove the giblets from the duck and pat it dry with paper towels.
- Season the duck inside and out with salt and pepper.
- Stuff the cavity with orange, onion, and thyme.
- Rub the skin with olive oil.
- Place the duck on a rack in a roasting pan.
- Roast for 1.5 to 2 hours, until the skin is crispy and the internal temperature reaches 165°F (74°C).
- Let it rest for 15 minutes before carving.
Notes
- You can use other herbs like rosemary or sage for different flavors.
- Serve with your favorite sides, such as roasted vegetables or mashed potatoes.
