- 2 lbs potatoes, peeled and diced
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup cream of mushroom soup
- 1/4 cup green onions, chopped
- 1/2 tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Boil the diced potatoes until tender.
- In a large bowl, mix sour cream, cheddar cheese, cream of mushroom soup, green onions, garlic powder, salt, and pepper.
- Add the cooked potatoes to the mixture and stir until well combined.
- Transfer the mixture to a baking dish and spread evenly.
- Bake for 30 minutes or until the top is golden and bubbly.
Notes
- For extra flavor, add cooked bacon bits.
- This dish can be prepared a day in advance and baked before serving.
