Ingredients

  • 1 cup cooked quinoa
  • 1 cup roasted sweet potatoes
  • 1/2 cup cranberry sauce
  • 1 cup chopped kale
  • 1/2 cup walnuts, chopped
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and dice sweet potatoes, then toss with olive oil, salt, and pepper.
  3. Spread sweet potatoes on a baking sheet and roast for 25-30 minutes.
  4. In a large bowl, combine cooked quinoa, roasted sweet potatoes, chopped kale, and cranberry sauce.
  5. Top with walnuts and feta cheese.
  6. Mix well and serve warm.

Notes

  • Feel free to add other vegetables like Brussels sprouts.
  • Can be made vegan by omitting feta cheese.
