Ingredients

- 1 cup cooked quinoa
- 1 cup roasted sweet potatoes
- 1/2 cup cranberry sauce
- 1 cup chopped kale
- 1/2 cup walnuts, chopped
- 1/2 cup feta cheese, crumbled
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Peel and dice sweet potatoes, then toss with olive oil, salt, and pepper.
- Spread sweet potatoes on a baking sheet and roast for 25-30 minutes.
- In a large bowl, combine cooked quinoa, roasted sweet potatoes, chopped kale, and cranberry sauce.
- Top with walnuts and feta cheese.
- Mix well and serve warm.
Notes
- Feel free to add other vegetables like Brussels sprouts.
- Can be made vegan by omitting feta cheese.
- Store leftovers in an airtight container in the fridge.
