A hearty tater tot breakfast casserole perfect for brunch.
Ingredients

- 1 pound ground sausage
- 1 cup shredded cheddar cheese
- 6 large eggs
- 2 cups milk
- 1 bag (32 oz) frozen tater tots
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, cook the sausage over medium heat until browned.
- In a large bowl, whisk together eggs, milk, salt, and pepper.
- Layer half of the tater tots in a greased baking dish.
- Add the cooked sausage and half of the cheese on top of the tater tots.
- Pour the egg mixture over the top.
- Add the remaining tater tots and cheese.
- Bake for 45 minutes or until the eggs are set.
Notes
- Let it cool for a few minutes before serving.
- You can add vegetables like bell peppers or onions for extra flavor.
