Delicious sweet potato casserole perfect for Thanksgiving.
Ingredients

- 4 cups mashed sweet potatoes
- 1/2 cup brown sugar
- 1/4 cup milk
- 1/4 cup butter, melted
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 cup mini marshmallows
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix mashed sweet potatoes, brown sugar, milk, and melted butter.
- Add eggs, vanilla extract, cinnamon, and nutmeg. Mix until smooth.
- Pour the mixture into a greased baking dish.
- Top with mini marshmallows.
- Bake for 30 minutes or until marshmallows are golden brown.
Notes
- Use fresh or canned sweet potatoes.
- Adjust sugar based on sweetness preference.
- Store leftovers in the fridge for up to 3 days.
