A refreshing summer corn salad with avocado.
Ingredients

- 2 cups of fresh corn kernels
- 1 ripe avocado, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup cilantro, chopped
- 2 tablespoons lime juice
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- In a large bowl, combine corn, avocado, cherry tomatoes, red onion, and cilantro.
- In a small bowl, whisk together lime juice and olive oil.
- Pour the dressing over the salad and toss gently.
- Season with salt and pepper to taste.
- Serve immediately or chill for 30 minutes before serving.

- For an extra kick, add diced jalapeño.
