Ingredients

  • 4 bell peppers
  • 1 cup cooked rice
  • 1 pound ground beef
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 cup shredded cheese
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, cook onion and garlic until soft.
  4. Add ground beef and cook until browned.
  5. Stir in cooked rice, diced tomatoes, chili powder, cumin, salt, and pepper.
  6. Stuff the mixture into the bell peppers.
  7. Place stuffed peppers in a baking dish and cover with foil.
  8. Bake for 30 minutes.
  9. Remove foil, sprinkle cheese on top, and bake for an additional 10 minutes.
