Ingredients

- 1 lb ground beef
- 1 cup chopped onion
- 2 cloves garlic, minced
- 1 cup chopped bell peppers
- 1 can diced tomatoes (14.5 oz)
- 4 cups beef broth
- 1 cup cooked rice
- 2 teaspoons Italian seasoning
- Salt to taste
- Pepper to taste
Instructions
- In a large pot, brown the ground beef over medium heat.
- Add the onion and garlic; sauté until the onion is translucent.
- Stir in the chopped bell peppers and cook for 3 minutes.
- Add the diced tomatoes, beef broth, cooked rice, Italian seasoning, salt, and pepper.
- Bring the mixture to a boil, then reduce heat and let simmer for 30 minutes.
- Serve hot, garnished with fresh herbs if desired.
Notes
- This soup can be made ahead and stored in the refrigerator.
- For a vegetarian version, substitute ground beef with lentils.
- Add more vegetables like corn or zucchini for extra nutrition.
