Ingredients

- 1 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ¾ cup granulated sugar
- ½ cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 tablespoon lemon zest
- ½ cup buttermilk
Instructions
- Preheat your oven to 350°F (175°C).
- Grease and flour a loaf pan.
- In a bowl, whisk together flour, baking powder, baking soda, and salt.
- In another bowl, beat the butter and sugar until creamy.
- Add eggs, vanilla, and lemon zest to the butter mixture; mix well.
- Alternate adding the flour mixture and buttermilk into the wet mixture, starting and ending with flour.
- Pour the batter into the prepared loaf pan.
- Bake for 50-60 minutes or until a toothpick comes out clean.
- Let it cool in the pan for 10 minutes, then transfer to a wire rack.

- Store leftovers in an airtight container.
- This loaf can be frozen for up to 3 months.
