Ingredients

  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup granulated sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon zest
  • ½ cup buttermilk

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour a loaf pan.
  3. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  4. In another bowl, beat the butter and sugar until creamy.
  5. Add eggs, vanilla, and lemon zest to the butter mixture; mix well.
  6. Alternate adding the flour mixture and buttermilk into the wet mixture, starting and ending with flour.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 50-60 minutes or until a toothpick comes out clean.
  9. Let it cool in the pan for 10 minutes, then transfer to a wire rack.
