- 1 lb chicken thighs
- 1 can coconut milk
- 2 tablespoons olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 tablespoons red curry paste
- 1 tablespoon lime juice
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon fresh cilantro, chopped
Instructions
- Heat olive oil in a pan over medium heat.
- Add onion, garlic, and ginger. Sauté until fragrant.
- Add chicken thighs and sear on both sides.
- Stir in red curry paste, coconut milk, lime juice, salt, and pepper.
- Bring to a simmer and cover. Cook for 25 minutes.
- Garnish with cilantro before serving.
