Description
A spatchcock turkey is a flattened turkey that cooks evenly and quickly, perfect for Thanksgiving.
Ingredients

- 1 whole turkey (12–14 lbs)
- 1 tablespoon olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon smoked paprika
- Fresh herbs (rosemary, thyme, sage) to taste
Instructions
- Preheat your oven to 450°F (230°C).
- Remove the turkey from the packaging and pat dry.
- Using kitchen shears, cut along both sides of the backbone to remove it.
- Flip the turkey over and press down on the breastbone to flatten.
- Rub olive oil all over the turkey.
- Season with salt, pepper, garlic powder, onion powder, and paprika.
- Add fresh herbs on top.
- Place the turkey on a baking sheet and roast for 1.5 to 2 hours.
- Check the internal temperature; it should reach 165°F (74°C).
- Let it rest for 15-20 minutes before carving.

- Ensure the turkey is completely thawed before preparation.
- Use a sharp knife or kitchen shears for easier cutting.
- Brining the turkey overnight can enhance flavor and moisture.
