Description

Snickerdoodle muffins are soft and fluffy baked treats with a cinnamon-sugar topping.


Ingredients

  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix flour, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, whisk melted butter, granulated sugar, brown sugar, eggs, milk, and vanilla.
  4. Combine the wet and dry ingredients until just mixed.
  5. Scoop the batter into the muffin tin, filling each cup about two-thirds full.
  6. In a small bowl, mix sugar and cinnamon for the topping.
  7. Sprinkle the cinnamon-sugar mixture over the batter.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Let cool before serving.
