Ingredients

  • 1 whole turkey (1214 lbs)
  • 1/2 cup olive oil
  • 2 tablespoons salt
  • 1 tablespoon black pepper
  • 2 tablespoons garlic powder
  • 2 tablespoons onion powder
  • 2 tablespoons smoked paprika
  • 4 cups applewood chips (for smoking)

Instructions

  1. Prepare the turkey by removing giblets and patting it dry.
  2. Rub the turkey with olive oil, salt, pepper, garlic powder, onion powder, and smoked paprika.
  3. Let the turkey sit at room temperature for 30 minutes.
  4. Soak applewood chips in water for 30 minutes, then drain.
  5. Preheat the smoker to 225°F (107°C).
  6. Place the soaked wood chips in the smoker box.
  7. Put the turkey in the smoker and smoke for about 30 minutes per pound.
  8. Check the internal temperature; it should reach 165°F (74°C) in the thickest part.
  9. Remove the turkey from the smoker and let it rest for 20-30 minutes before carving.
