Ingredients

- 1 pound shrimp, peeled and deveined
- 1 cup rice
- 2 cups chicken broth
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 2 tablespoons Cajun seasoning
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- Heat oil in a large skillet over medium heat.
- Add onion, bell pepper, and celery. Cook until soft.
- Add garlic and cook for 1 minute.
- Stir in Cajun seasoning and shrimp. Cook until shrimp turn pink.
- Add rice and chicken broth. Stir to combine.
- Bring to a boil, then reduce heat and cover.
- Simmer for 20 minutes or until rice is cooked.
- Fluff with a fork and serve hot.
