- 1 whole turkey breast (about 3–4 lbs)
- 2 cups Brussels sprouts, halved
- 2 cups carrots, sliced
- 1 cup red onion, chopped
- 3 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 tablespoon garlic powder
- 1 tablespoon dried thyme
- 1 tablespoon dried rosemary
Instructions
- Preheat the oven to 400°F (200°C).
- Place the turkey breast in the center of a large sheet pan.
- Surround the turkey with Brussels sprouts, carrots, and red onion.
- Drizzle olive oil over the turkey and vegetables.
- Season with salt, pepper, garlic powder, thyme, and rosemary.
- Toss the vegetables to coat them evenly.
- Bake for 1 hour, or until the turkey reaches an internal temperature of 165°F (75°C).
- Let the turkey rest for 10 minutes before slicing.
Notes
- Adjust cooking time based on the size of the turkey breast.
- Feel free to add other vegetables as desired.
- Leftovers can be stored in the refrigerator for up to 3 days.
