- 4 medium potatoes, diced
- 1 onion, chopped

- 4 cups beef broth

Instructions
- Heat olive oil in a large pot over the campfire.
- Add beef and brown on all sides.
- Add onion and cook until softened.
- Stir in potatoes, carrots, garlic powder, thyme, salt, and pepper.
- Pour in beef broth and bring to a boil.
- Reduce heat and simmer for 1.5 to 2 hours until meat is tender.
- Serve hot.
