Delicious red velvet whoopie pies filled with cream cheese frosting.
Ingredients

- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking soda
- 1 teaspoon cocoa powder
- 1 teaspoon salt
- 1 cup vegetable oil
- 1 cup buttermilk
- 2 large eggs
- 2 tablespoons red food coloring
- 1 teaspoon vanilla extract
- 1 cup cream cheese, softened
- 1/2 cup butter, softened
- 2 cups powdered sugar
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix flour, sugar, baking soda, cocoa powder, and salt.
- In another bowl, blend oil, buttermilk, eggs, food coloring, and vanilla.
- Combine wet and dry ingredients until smooth.
- Drop spoonfuls of batter onto a baking sheet.
- Bake for 10-12 minutes. Let cool.
- For the filling, beat cream cheese and butter until creamy.
- Gradually add powdered sugar and mix well.
- Spread filling on one pie and top with another.
