Delicious red velvet muffins with cream cheese frosting.


Ingredients

  • 1 cup vegetable oil
  • 1 cup buttermilk
  • 2 large eggs
  • 2 tablespoons red food coloring
  • 1 teaspoon vanilla extract
  • ½ cup cream cheese, softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract for frosting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix flour, sugar, baking soda, salt, and cocoa powder.
  3. In another bowl, combine oil, buttermilk, eggs, food coloring, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fill muffin cups ¾ full with the batter.
  6. Bake for 20-25 minutes or until a toothpick comes out clean.
  7. Let muffins cool completely.
  8. For frosting, mix cream cheese, powdered sugar, and vanilla until smooth.
  9. Frost cooled muffins with cream cheese frosting.
