A rich and creamy red velvet cheesecake with a chocolate crust.
Ingredients

- 1 1/2 cups crushed chocolate cookies
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup granulated sugar
- 1 cup sour cream
- 3 large eggs
- 2 tbsp cocoa powder
- 1 tbsp red food coloring
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 325°F (160°C).
- Combine crushed cookies and melted butter in a bowl. Press mixture into the bottom of a springform pan.
- In another bowl, beat cream cheese and sugar until smooth.
- Add sour cream, eggs, cocoa powder, food coloring, and vanilla. Mix until well combined.
- Pour the cheesecake mixture over the crust.
- Bake for 55-60 minutes or until the center is set.
- Let it cool, then refrigerate for at least 4 hours before serving.
Notes
- Use room temperature ingredients for a smoother batter.
- Top with whipped cream for extra flavor.
- Store leftovers in the refrigerator.
