  • 1 cup pumpkin puree
  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened
  • 1/4 cup butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract for frosting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix flour, baking soda, baking powder, salt, and spices.
  3. In another bowl, combine pumpkin puree, oil, sugar, eggs, and vanilla.
  4. Gradually add dry ingredients to the wet mixture.
  5. Pour the batter into a greased loaf pan.
  6. Bake for 60 minutes or until a toothpick comes out clean.
  7. Let it cool before frosting.
  8. For the cream cheese frosting, beat together cream cheese, butter, powdered sugar, and vanilla.
  9. Spread frosting over the cooled pumpkin bread.
