- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp ground ginger
- 1 cup pumpkin puree
- 1/2 cup vegetable oil
- 1 cup sugar
- 2 large eggs
- 1 tsp vanilla extract
- 8 oz cream cheese, softened
- 1/4 cup butter, softened
- 2 cups powdered sugar
- 1 tsp vanilla extract for frosting
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix flour, baking soda, baking powder, salt, and spices.
- In another bowl, combine pumpkin puree, oil, sugar, eggs, and vanilla.
- Gradually add dry ingredients to the wet mixture.
- Pour the batter into a greased loaf pan.
- Bake for 60 minutes or until a toothpick comes out clean.
- Let it cool before frosting.
- For the cream cheese frosting, beat together cream cheese, butter, powdered sugar, and vanilla.
- Spread frosting over the cooled pumpkin bread.
