Ingredients

- 1 cup pumpkin puree
- 1 cup sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp salt
- 8 oz cream cheese
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix pumpkin puree, sugar, vegetable oil, and eggs.
- Add flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Mix until smooth.
- Pour the batter into a greased baking dish.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Let the bars cool completely.
- In a separate bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
- Spread the cream cheese frosting over the cooled bars.
Notes
- Store leftovers in the refrigerator.
