Delicious pineapple upside down cupcakes with a caramel topping.


Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup brown sugar
  • 1/2 cup crushed pineapple, drained
  • 1/2 teaspoon baking powder

  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix flour, baking powder, and salt.
  3. In another bowl, cream butter and sugars until smooth.
  4. Add eggs and vanilla, mix well.
  5. Gradually add flour mixture to wet ingredients.
  6. Place crushed pineapple at the bottom of cupcake liners.
  7. Pour batter over pineapple.
  8. Bake for 20-25 minutes.
  9. Let cool before serving.
