- 1 cup unsalted butter, softened
- 1 cup brown sugar
- 1 can (20 oz) pineapple slices
- 1 cup all-purpose flour
- 2 cups granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup milk
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a bundt pan with butter and sprinkle with brown sugar.
- Arrange pineapple slices at the bottom of the pan.
- In a bowl, cream together butter and granulated sugar.
- Add eggs one at a time, mixing well after each addition.
- Stir in vanilla extract.
- In another bowl, combine flour, baking powder, and salt.
- Gradually add dry ingredients to the butter mixture, alternating with milk.
- Pour batter over the pineapple in the bundt pan.
- Bake for 50-60 minutes or until a toothpick comes out clean.
- Let cool for 10 minutes, then invert onto a plate.
Notes
- Serve warm or at room temperature.
- Can be stored in an airtight container for up to 3 days.
- For extra flavor, add chopped cherries on top of the pineapple.
