Description

Ingredients

  • 4 large onions, thinly sliced
  • 4 tablespoons butter
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 8 cups beef broth
  • 1 cup white wine
  • 1 tablespoon fresh thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 8 slices of baguette
  • 2 cups grated Gruyère cheese

Instructions

  1. Melt butter and olive oil in a pot over medium heat.
  2. Add onions and cook until caramelized, about 30 minutes.
  3. Add garlic and cook for 1 minute.
  4. Pour in white wine and cook until reduced by half.
  5. Add beef broth, thyme, bay leaf, salt, and pepper; simmer for 30 minutes.
  6. Preheat broiler.
  7. Place baguette slices on top of soup and sprinkle with cheese.
  8. Broil until cheese is bubbly and golden.
