Description

Pan seared cod in white wine tomato basil sauce is a flavorful dish that combines tender cod with a rich sauce.


Ingredients

  • 4 cod fillets
  • 1 cup white wine
  • 2 cups diced tomatoes
  • 1/4 cup fresh basil, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Season cod fillets with salt and pepper.
  3. Place cod fillets in the pan and sear for 4-5 minutes on each side.
  4. Remove cod and set aside.
  5. In the same pan, add garlic and sauté for 1 minute.
  6. Add diced tomatoes and white wine, stirring well.
  7. Bring to a simmer and cook for 5 minutes.
  8. Add fresh basil and return cod to the pan.
  9. Cook for an additional 2-3 minutes until cod is heated through.
  10. Serve hot with sauce over the cod.
