- 4 cod fillets
- 1 cup white wine
- 2 cups diced tomatoes
- 1/4 cup fresh basil, chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a pan over medium heat.
- Season cod fillets with salt and pepper.
- Place cod fillets in the pan and sear for 4-5 minutes on each side.
- Remove cod and set aside.
- In the same pan, add garlic and sauté for 1 minute.
- Add diced tomatoes and white wine, stirring well.
- Bring to a simmer and cook for 5 minutes.
- Add fresh basil and return cod to the pan.
- Cook for an additional 2-3 minutes until cod is heated through.
- Serve hot with sauce over the cod.
