Description
A delicious paleo-friendly Thanksgiving meal.
Ingredients

- 4 lbs turkey
- 2 tbsp olive oil
- 1 tbsp salt
- 1 tbsp pepper
- 2 cups carrots, chopped
- 2 cups celery, chopped
- 1 onion, chopped
- 4 cups chicken broth
- 1 tsp thyme
- 1 tsp rosemary
Instructions
- Preheat oven to 350°F (175°C).
- Rub turkey with olive oil, salt, and pepper.
- Place chopped vegetables in the roasting pan.
- Put turkey on top of vegetables.
- Pour chicken broth into the pan.
- Sprinkle thyme and rosemary on turkey.
- Cover with foil and roast for 2 hours.
- Remove foil and roast for an additional hour or until turkey is cooked.
- Let turkey rest before carving.
Notes
- Use fresh herbs for better flavor.
- Adjust cooking time based on turkey size.
- Save leftovers for sandwiches or salads.
