Description

A delicious paleo-friendly Thanksgiving meal.


Ingredients

  • 4 lbs turkey
  • 2 tbsp olive oil
  • 1 tbsp salt
  • 1 tbsp pepper
  • 2 cups carrots, chopped
  • 2 cups celery, chopped
  • 1 onion, chopped
  • 4 cups chicken broth
  • 1 tsp thyme
  • 1 tsp rosemary

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Rub turkey with olive oil, salt, and pepper.
  3. Place chopped vegetables in the roasting pan.
  4. Put turkey on top of vegetables.
  5. Pour chicken broth into the pan.
  6. Sprinkle thyme and rosemary on turkey.
  7. Cover with foil and roast for 2 hours.
  8. Remove foil and roast for an additional hour or until turkey is cooked.
  9. Let turkey rest before carving.
