Instructions
- Preheat your oven to 425°F (220°C).
- Wash and boil the baby potatoes until fork-tender, about 15-20 minutes.
- Drain the potatoes and let them cool slightly.
- Place the potatoes on a baking sheet lined with parchment paper.
- Using a fork or potato masher, gently smash each potato until flattened.
- Drizzle olive oil over the smashed potatoes and season with salt, pepper, and garlic powder.
- Bake in the oven for 25-30 minutes until golden and crispy.
- Garnish with fresh herbs if desired and serve warm.
