Ingredients

  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup frozen peas
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large oven-safe skillet, heat olive oil over medium heat.
  3. Add onion and garlic, and sauté until softened.
  4. Stir in rice, chicken broth, paprika, salt, and pepper.
  5. Place chicken thighs on top of the rice mixture.
  6. Cover the skillet with a lid or foil.
  7. Bake in the preheated oven for 45 minutes.
  8. Add frozen peas, stir gently, and bake for an additional 10 minutes.
  9. Remove from oven and let it sit for 5 minutes before serving.

  • For extra flavor, marinate chicken in spices for a few hours.
