Ingredients

- 4 chicken thighs
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup frozen peas
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- In a large oven-safe skillet, heat olive oil over medium heat.
- Add onion and garlic, and sauté until softened.
- Stir in rice, chicken broth, paprika, salt, and pepper.
- Place chicken thighs on top of the rice mixture.
- Cover the skillet with a lid or foil.
- Bake in the preheated oven for 45 minutes.
- Add frozen peas, stir gently, and bake for an additional 10 minutes.
- Remove from oven and let it sit for 5 minutes before serving.
Notes
- Adjust seasoning to taste.
- For extra flavor, marinate chicken in spices for a few hours.
- Serve with a side salad for a complete meal.
