Description
A creamy and hearty lasagna soup made in one pot.
Ingredients

- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 4 cups chicken broth
- 12 oz lasagna noodles, broken
- 1 cup ricotta cheese
- 2 cups shredded mozzarella cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- In a large pot, brown the ground beef with onion and garlic.
- Add crushed tomatoes, chicken broth, and Italian seasoning.
- Bring to a boil and add broken lasagna noodles.
- Cook until noodles are tender.
- Stir in ricotta cheese and half of the mozzarella.
- Top with remaining mozzarella and let it melt before serving.
Notes
- Can substitute ground turkey for beef.
- Add spinach for extra nutrition.
- Adjust seasoning to your taste.
