A creamy and hearty lasagna soup made in one pot.


Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups chicken broth
  • 12 oz lasagna noodles, broken
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the ground beef with onion and garlic.
  2. Add crushed tomatoes, chicken broth, and Italian seasoning.
  3. Bring to a boil and add broken lasagna noodles.
  4. Cook until noodles are tender.
  5. Stir in ricotta cheese and half of the mozzarella.
  6. Top with remaining mozzarella and let it melt before serving.

Notes

  • Can substitute ground turkey for beef.
  • Add spinach for extra nutrition.
