  • 1 tablespoon olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chicken thighs and brown on both sides.
  3. Remove chicken and set aside.
  4. Add onion, garlic, and bell pepper to the pot. Cook until softened.
  5. Stir in rice, paprika, salt, and black pepper.
  6. Pour in chicken broth and bring to a boil.
  7. Return chicken to the pot, cover, and reduce heat to low.
  8. Cook for 20-25 minutes or until rice is tender and chicken is cooked through.
  9. Fluff rice with a fork and serve.
