Ingredients

- 1 cup quinoa, rinsed
- 2 cups vegetable broth
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or fresh
- 1 bell pepper, chopped
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 lime, juiced
- Fresh cilantro for garnish
Instructions
- In a large skillet, combine quinoa and vegetable broth.
- Add black beans, corn, bell pepper, cumin, chili powder, garlic powder, salt, and pepper.
- Bring to a boil over medium heat.
- Reduce heat, cover, and simmer for 20 minutes or until quinoa is cooked.
- Remove from heat and stir in lime juice.
- Garnish with fresh cilantro before serving.
