Ingredients

  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or fresh
  • 1 bell pepper, chopped
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 lime, juiced
  • Fresh cilantro for garnish

Instructions

  1. In a large skillet, combine quinoa and vegetable broth.
  2. Add black beans, corn, bell pepper, cumin, chili powder, garlic powder, salt, and pepper.
  3. Bring to a boil over medium heat.
  4. Reduce heat, cover, and simmer for 20 minutes or until quinoa is cooked.
  5. Remove from heat and stir in lime juice.
  6. Garnish with fresh cilantro before serving.
