A classic old fashioned potato salad recipe that is creamy and flavorful.
Ingredients

- 2 pounds potatoes, peeled and cubed
- 1 cup mayonnaise
- 2 tablespoons mustard
- 1/2 cup celery, chopped
- 1/2 cup onion, chopped
- 1/4 cup sweet pickle relish
- 2 hard-boiled eggs, chopped
- Salt and pepper to taste
Instructions
- Boil the potatoes in salted water until tender, about 15 minutes.
- Drain and let cool.
- In a large bowl, mix mayonnaise, mustard, celery, onion, pickle relish, and eggs.
- Add cooled potatoes and mix gently.
- Season with salt and pepper.
- Chill in the refrigerator for at least 2 hours before serving.
Notes
- Use waxy potatoes for better texture.
- Adjust ingredients to taste.
- Can be made a day ahead for better flavor.
