Description

A collection of unique side dishes for Thanksgiving that break away from the traditional menu.


Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 cup roasted Brussels sprouts
  • 1/2 cup dried cranberries
  • 1/4 cup chopped pecans
  • 1/4 cup feta cheese
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. Remove from heat and let it sit for 5 minutes.
  5. Fluff quinoa with a fork.
  6. In a large bowl, combine quinoa, Brussels sprouts, cranberries, and pecans.
  7. In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
  8. Pour dressing over quinoa mixture and toss to coat.
  9. Top with feta cheese before serving.

Notes

  • Can be served warm or cold.
  • Add cooked chicken for a heartier dish.
  • Substitute feta with goat cheese for a different flavor.
