A collection of unique side dishes for Thanksgiving that break away from the traditional menu.
Ingredients

- 1 cup quinoa
- 2 cups vegetable broth
- 1 cup roasted Brussels sprouts
- 1/2 cup dried cranberries
- 1/4 cup chopped pecans
- 1/4 cup feta cheese
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- Remove from heat and let it sit for 5 minutes.
- Fluff quinoa with a fork.
- In a large bowl, combine quinoa, Brussels sprouts, cranberries, and pecans.
- In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
- Pour dressing over quinoa mixture and toss to coat.
- Top with feta cheese before serving.
Notes
- Can be served warm or cold.
- Add cooked chicken for a heartier dish.
- Substitute feta with goat cheese for a different flavor.
