Ingredients

  • 125g unsalted butter, melted
  • 500g cream cheese
  • 100g powdered sugar
  • 300ml heavy cream
  • 1 tsp vanilla extract

Instructions

  1. Crush the digestive biscuits in a bowl.
  2. Add melted butter and mix until combined.
  3. Press the mixture into the bottom of a springform pan.
  4. In another bowl, beat the cream cheese and powdered sugar until smooth.
  5. Add the heavy cream and vanilla extract, and mix until well combined.
  6. Pour the cheesecake mixture over the biscuit base.
  7. Refrigerate for at least 4 hours or until set.
  8. Top with fresh fruit if desired before serving.
