Ingredients

- 250g digestive biscuits
- 125g unsalted butter, melted
- 500g cream cheese
- 100g powdered sugar
- 300ml heavy cream
- 1 tsp vanilla extract
- Fresh fruit for topping (optional)
Instructions
- Crush the digestive biscuits in a bowl.
- Add melted butter and mix until combined.
- Press the mixture into the bottom of a springform pan.
- In another bowl, beat the cream cheese and powdered sugar until smooth.
- Add the heavy cream and vanilla extract, and mix until well combined.
- Pour the cheesecake mixture over the biscuit base.
- Refrigerate for at least 4 hours or until set.
- Top with fresh fruit if desired before serving.
Notes
- Make sure the cream cheese is at room temperature for easier mixing.
- You can substitute digestive biscuits with graham crackers.
