A simple and delicious no bake blueberry cheesecake.

- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 1 cup cream cheese, softened
- ½ cup powdered sugar
- 1 cup heavy cream
- 1 cup blueberry puree
- 1 tablespoon lemon juice
- ½ cup fresh blueberries for topping
Instructions
- In a bowl, mix graham cracker crumbs and melted butter.
- Press the mixture into the bottom of a springform pan.
- In another bowl, beat the cream cheese and powdered sugar until smooth.
- Add heavy cream, blueberry puree, and lemon juice. Mix until combined.
- Pour the mixture over the crust in the pan.
- Refrigerate for at least 4 hours or until set.
- Top with fresh blueberries before serving.
Notes
- Make sure the cream cheese is at room temperature for easy mixing.
- You can use store-bought blueberry puree or make your own.
- Keep leftovers refrigerated.
