Ingredients

  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup pumpkin puree
  • 1 teaspoon pumpkin spice
  • 1/2 cup cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 cup whipped cream

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, beat the butter and sugar until creamy.
  3. Add the egg and vanilla, mix well.
  4. In another bowl, combine flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture.
  6. Fold in the pumpkin puree and pumpkin spice.
  7. Pour the batter into mini cupcake liners.
  8. Bake for 15-20 minutes or until a toothpick comes out clean.
  9. Let cool and prepare the frosting by mixing cream cheese and powdered sugar.
  10. Top each mini dessert with cream cheese frosting and whipped cream.
