Ingredients

- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/2 cup sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup pumpkin puree
- 1 teaspoon pumpkin spice
- 1/2 cup cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 cup whipped cream
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, beat the butter and sugar until creamy.
- Add the egg and vanilla, mix well.
- In another bowl, combine flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture.
- Fold in the pumpkin puree and pumpkin spice.
- Pour the batter into mini cupcake liners.
- Bake for 15-20 minutes or until a toothpick comes out clean.
- Let cool and prepare the frosting by mixing cream cheese and powdered sugar.
- Top each mini dessert with cream cheese frosting and whipped cream.
Notes
- Use fresh pumpkin puree for best flavor.
- Store leftovers in the refrigerator.
