A collection of recipes for a traditional Mexican Thanksgiving celebration.
Ingredients
- Turkey – 1 whole (12-14 lbs)
- Adobo sauce – 1 cup
- Garlic – 6 cloves, minced
- Onion – 1 large, chopped
- Oregano – 1 tablespoon
- Cilantro – 1/2 cup, chopped
- Chicken broth – 2 cups
- Poblano peppers – 3, roasted and chopped
- Rice – 2 cups
- Black beans – 1 can, drained and rinsed
- Mexican cheese – 2 cups, shredded
- Flour tortillas – 10, for serving
Instructions
- Preheat your oven to 350°F (175°C).
- Mix adobo sauce, garlic, onion, oregano, and cilantro.
- Rub mixture all over the turkey.
- Place turkey in a roasting pan and pour chicken broth around it.
- Roast turkey for about 3-4 hours, basting occasionally.
- Cook rice according to package instructions.
- Add black beans and chopped poblano peppers to the rice when done.
- Serve turkey with rice and beans, topped with cheese and warm tortillas.
Notes
- Allow the turkey to rest for 20 minutes before carving.
- Adjust spice levels in adobo sauce to your taste.
- Make rice ahead of time for easier serving.
