A refreshing Mexican shrimp cocktail packed with flavors.
Ingredients

- 1 pound shrimp, peeled and deveined
- 1 cup tomato juice
- 1/2 cup diced avocado
- 1/2 cup diced cucumber
- 1/4 cup chopped cilantro
- 1/4 cup diced red onion
- 1 jalapeño, minced
- 2 limes, juiced
- Salt to taste
Instructions
- Boil shrimp in salted water until pink, about 3-4 minutes.
- Drain and cool the shrimp under cold water.
- In a bowl, combine tomato juice, avocado, cucumber, cilantro, red onion, and jalapeño.
- Add lime juice and salt to the mixture.
- Add the cooled shrimp and mix well.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Serve with tortilla chips.
- Adjust spiciness by adding more jalapeño or hot sauce.
- Can be made a day ahead for better flavor.
