A flavorful and easy Mexican dish made in a crockpot.
Ingredients

- 1 lb chicken breast
- 1 can black beans, drained
- 1 can corn, drained
- 1 bell pepper, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1 cup salsa
- 1 cup shredded cheese
Instructions
- Place chicken at the bottom of the crockpot.
- Add black beans, corn, bell pepper, onion, garlic, taco seasoning, and salsa.
- Stir to combine all ingredients.
- Cover and cook on low for 6-8 hours or high for 4 hours.
- Shred chicken before serving and mix well.
- Top with shredded cheese before serving.
Notes
- Serve with tortillas or over rice.
- Add jalapeños for extra heat.
- Keep leftovers in the fridge for up to 3 days.
