Ingredients

  • 1 lb chicken breast
  • 1 can black beans, drained
  • 1 can corn, drained
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 cup salsa
  • 1 cup shredded cheese

Instructions

  1. Place chicken at the bottom of the crockpot.
  2. Add black beans, corn, bell pepper, onion, garlic, taco seasoning, and salsa.
  3. Stir to combine all ingredients.
  4. Cover and cook on low for 6-8 hours or high for 4 hours.
  5. Shred chicken before serving and mix well.
  6. Top with shredded cheese before serving.

Notes

  • Serve with tortillas or over rice.
  • Add jalapeños for extra heat.
  • Keep leftovers in the fridge for up to 3 days.
