Ingredients

  • 1 can black beans, drained
  • 1 cup corn, frozen or canned

  • 1/2 cup diced tomatoes

  • 1 teaspoon chili powder

  • 1/4 cup milk
  • 2 eggs

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix cornbread mix, milk, and eggs.
  3. In a baking dish, layer black beans, corn, diced tomatoes, onion, and spices.
  4. Spread the cornbread mixture on top of the layered ingredients.
  5. Sprinkle shredded cheese on top.
  6. Bake for 25-30 minutes or until golden brown.
