Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season chicken breasts with salt and pepper.
  3. Add chicken to the skillet and cook until golden brown on both sides.
  4. Remove chicken and set aside.
  5. In the same skillet, add garlic and sauté for 1 minute.
  6. Add sun-dried tomatoes and spinach, cooking until spinach wilts.
  7. Pour in heavy cream and bring to a simmer.
  8. Stir in parmesan cheese until melted and smooth.
  9. Return chicken to the skillet and coat with sauce.
  10. Simmer for 10 minutes, then serve hot.
