Ingredients

- 2 cups chopped vegetables (carrots, celery, onions)
- 4 cups vegetable broth
- 1 cup quinoa
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup chopped nuts (walnuts or pecans)
Instructions
- Heat olive oil in a pot over medium heat.
- Add chopped vegetables and sauté for 5 minutes.
- Stir in quinoa, broth, thyme, salt, and pepper.
- Bring to a boil, then reduce to a simmer.
- Cover and cook for 15 minutes or until quinoa is fluffy.
- Mix in chopped nuts before serving.
Notes
- This dish can be made a day ahead and reheated.
- Store in an airtight container in the fridge.
