A light and refreshing dessert made with lemon and creamy chocolate.
Ingredients

- 1 cup white chocolate chips
- 1/2 cup heavy cream
- 2 tablespoons lemon juice
- 1 tablespoon lemon zest
- 1/2 cup crushed graham crackers
Instructions
- In a saucepan, heat the heavy cream until it simmers.
- Remove from heat and add the white chocolate chips. Stir until melted.
- Add the lemon juice and lemon zest. Mix well.
- Chill the mixture in the refrigerator for 1 hour.
- Once chilled, scoop out small portions and roll into balls.
- Roll the truffles in crushed graham crackers to coat.
- Place on a baking sheet and refrigerate until firm.
Notes
- Store in an airtight container in the fridge.
- Use fresh lemon juice for better flavor.
- Can substitute white chocolate with dark chocolate if preferred.
