Description
A refreshing lemon quinoa chickpea salad that is nutritious and easy to prepare.
Ingredients

- 1 cup quinoa
- 2 cups water
- 1 can chickpeas, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 1/4 cup lemon juice
- Salt, to taste
- Pepper, to taste
Instructions
- Rinse quinoa under cold water.
- In a pot, bring water to a boil and add quinoa.
- Reduce heat, cover, and simmer for 15 minutes.
- Remove from heat and let it sit for 5 minutes.
- Fluff quinoa with a fork and let it cool.
- In a large bowl, combine chickpeas, tomatoes, cucumber, onion, and parsley.
- Add cooled quinoa to the bowl.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour dressing over the salad and mix well.
- Serve chilled or at room temperature.
Notes
- Can substitute lemon juice with lime juice.
- Add avocado for extra creaminess.
- Store leftovers in the fridge for up to 3 days.
