- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 3 eggs
- ½ cup lemon juice
- 1 tablespoon lemon zest
- 1 teaspoon vanilla extract
- 4 egg whites
- ¼ teaspoon cream of tartar
- ½ cup powdered sugar
Instructions
- Preheat the oven to 325°F (163°C).
- Mix graham cracker crumbs with melted butter and press into the bottom of a springform pan.
- In a bowl, beat cream cheese and granulated sugar until smooth.
- Add eggs, lemon juice, lemon zest, and vanilla extract. Mix until well combined.
- Pour the cheesecake filling over the crust.
- Bake for 50-60 minutes until set. Let cool.
- In a separate bowl, beat egg whites and cream of tartar until soft peaks form.
- Add powdered sugar gradually while beating until stiff peaks form.
- Spread meringue over the cooled cheesecake.
- Bake for an additional 10 minutes until meringue is golden.
- Let cool completely before serving.

- Chill the cheesecake for at least 4 hours before serving.
