Delicious lemon cheesecake bars with a creamy filling and a buttery crust.


Ingredients

  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup cream cheese, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a bowl, mix graham cracker crumbs and melted butter.
  3. Press the mixture into the bottom of a greased 9×9 inch baking pan.
  4. In another bowl, beat cream cheese and sugar until smooth.
  5. Add eggs, lemon juice, lemon zest, and vanilla. Mix until well combined.
  6. Pour the filling over the crust in the baking pan.
  7. Bake for 25-30 minutes until set.
  8. Let it cool, then refrigerate for at least 2 hours before cutting into bars.
