Ingredients

- 1 lb chicken, diced
- 1 lb shrimp, peeled and deveined
- 1 lb sausage, sliced
- 2 cups rice
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 stalks celery, chopped
- 4 cloves garlic, minced
- 4 cups chicken broth
- 1 can diced tomatoes
- 2 tsp Cajun seasoning
- Salt and pepper to taste
Instructions
- Heat a large pot over medium heat.
- Add chicken and sausage, cook until browned.
- Add shrimp and cook until pink.
- Stir in onion, bell pepper, celery, and garlic; cook until soft.
- Add rice, chicken broth, diced tomatoes, and Cajun seasoning.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Fluff rice with a fork and serve hot.

- Adjust spice level to taste.
- Use any mix of proteins you prefer.
