Ingredients

  • 1 whole turkey (1012 lbs)
  • 2 cups jerk marinade
  • 4 cups rice
  • 2 cans black beans
  • 1 cup corn
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 teaspoon allspice
  • 1/2 cup coconut milk
  • Salt and pepper to taste
  • 1 cup fried plantains
  • 1 pineapple, sliced
  • 1 cup peas

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Marinate the turkey with jerk marinade for at least 4 hours.
  3. Place the turkey in the oven and roast for about 3 hours, basting occasionally.
  4. Cook rice according to package instructions, adding black beans, corn, bell pepper, onion, garlic, thyme, and allspice.
  5. Add coconut milk to the rice mixture and season with salt and pepper.
  6. Prepare fried plantains and set aside.
  7. Once the turkey is cooked, let it rest for 20 minutes before carving.
  8. Serve turkey with rice, beans, plantains, and sliced pineapple.

Notes

  • Let the turkey marinate overnight for better flavor.
  • Adjust spices in the rice to your taste.
