Ingredients

  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup black olives, sliced
  • 1/2 cup bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup Italian dressing
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Cook the cheese tortellini according to package instructions. Drain and cool.
  2. In a large bowl, combine the tortellini, cherry tomatoes, cucumber, olives, bell pepper, and red onion.
  3. Add the Italian dressing and toss to combine.
  4. Sprinkle with Parmesan cheese, salt, and pepper. Mix well.
